La tuba, elaborada a partir de dos ingredientes principales: crema de coco (extraída de la palma de coco) y vinagre de manzana, es una experiencia sensorial que combina sabores únicos. Algunos vendedores la ofrecen en su forma más pura, es decir, directamente extraída de la palma de coco, y la enriquecen con pequeños trozos de manzana y nuez para un sabor inigualable.
Originally from Africa, where it is known as Legmi, tuba arrived in Mexico, specifically in Colima, during the colonial era thanks to Fray Antonio Tello, who perfected the extraction method. The artisanal process of collecting coconut cream involves climbing the palm tree twice a day, in the morning and at dusk, to make cuts in the trunk and collect the precious pulp.
