Tacos, a Mexican dish par excellence

Mexican tacos are a gastronomic tradition. There is not a single place in the country that does not have a good taco shop. What's more: there is even a popular saying about tacos. 

From all over the world they see us Mexicans with great curiosity, amazement and admiration. There are plenty of reasons, on the one hand, the impressive color of indigenous art, music and of course our history. On the other hand, what distinguishes us as Mexicans: our joy, solidarity, warmth, and the affection with which we receive our own and strangers. But also a very important point that distinguishes our country is the variety and exquisite flavors of our food.

Mexico is famous for its great gastronomic diversity and when we say diversity, we refer to all those rare and exotic things, for example: grasshoppers, escamoles, jumiles, chicatana, maguey worms, among other bugs that we eat. Without leaving aside everything that we take advantage of from the cow or beef: brains, eye, tongue, crop, suadero, nane, nenepil, cheek, etc. For some this may sound unpleasant and strange, while for many others this is a delicacy from the gods. Without a doubt, it is all a matter of perception, attitude and staying open to new and interesting culinary experiences.

Mexican tacos: Famous all over the world

Each and every one of us Mexicans should feel extremely proud of our roots and the cultural variety that characterizes us; even more so, to share it with the world. Throughout the Mexican Republic, we are fortunate to have an immense variety of typical dishes; However, in my opinion, one of the most famous dishes in the world are tacos. In all corners of Mexico, even in the smallest town, there will always be a colorful stand that sells tacos.

But how is a taco?

This exotic food distinguishes us Mexicans from the rest of the world. We make tacos out of practically everything, and of course there are 3 stars in this area: the tortilla, the meat and the sauce.

The tortilla:

This is an essential element, that is, without a tortilla there is no taco. The tortilla is a food made of corn dough and water, which after a certain degree of cooking on the griddle, is served round and flat. It can be done by hand or by machine. It is said that its pre-Hispanic roots come from Tlaxcala, which means "place of cornbread or place of tortillas". In this way, its exquisite flavor to some extent "neutral" can accompany any stew or meat.

Meat or stew: the soul of the taco

The perfect pairing in this delicious dish is undoubtedly what comes inside. That is, it can be from beef, pork and chicken, to insects and of course cheese (quesadillas).

Sauces: the perfect seasoning in the relationship 

Has anyone heard that you have to spice up life? Well, the sauces are in charge of putting the flavor or final touch to the taco. There are sauces of all kinds. The sauce is a mixture of tomato, onion, garlic and chile, usually. But there is a wide variety of chiles and ways of making sauces in Mexico. That is another story that I will tell you...

They should also know that the tacos can also be accompanied by: cilantro, chopped onion, pineapple, lemon, cheese, and in some cases even cabbage or cabbage and beans. It's all a matter of taste, there are those who are satisfied with adding onion and cilantro.

In Puerto Vallarta and Bahía de Banderas, we can find those famous little streets, where there are always taco stands.. In Vallarta, one of the oldest and most famous is Sahuayo Tacos in Benemérito de las Américas corner Pancho Villa. There they specialize in steak tacos (roasted beef) or pastor (marinated pork).

You also have more gourmet options, served in Mexican food restaurants such as the myrtle, where they offer a not so common variety of delicious grasshopper tacos, hibiscus flower quesadillas, or pumpkin, chanfaina (liver, heart and lung) tacos.

And of course you can't miss the head tacos, assorted or separately. How about a spectacular taquito of brains or tongue? But there are also for the most exotic eye, meat, cheek, lip, etc. So to honor the saying, I eat a taco with my tongue, nothing better than Oscar's, there on Avenida Las Torres corner Cardenal in Los Sauces, highly recommended...

I eat a taco with my tongue...

Well, in Mexico the taco is so important, that it even has a popular saying "From language, I eat a taco"... which means that we can talk and say a lot, but the most important thing is action. So those who have not tried a good taco, have to do it decidedly. Or almost almost that we can say, that he has not eaten Mexican food.

A good taco makes even the finest eater lick their fingers.
