With a perfect balance between sour and sweet, the tuba stands out as one of the most traditional and refreshing drinks of Jalisco. Puerto VallartaThis delicious drink can be found along the boardwalk to the Los Muertos pier, and is the ideal companion to beat the heat while touring the city.

Made from two main ingredients: coconut cream (extracted from the coconut palm) and apple cider vinegar, tuba is a sensorial experience that combines unique flavours. Some vendors offer it in its purest form, i.e. directly extracted from the coconut palm, and enrich it with small pieces of apple and walnut for an unrivalled flavour.

Originally from Africa, where it is known as Legmi, tuba arrived in Mexico, specifically in Colima, during the colonial era thanks to Fray Antonio Tello, who perfected the extraction method. The artisanal process of collecting coconut cream involves climbing the palm tree twice a day, in the morning and at dusk, to make cuts in the trunk and collect the precious pulp.
